Blueberry Cobbler

Yield: Makes 6 servings.

  • 1/2 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 3 cups blueberries
  • 1 tablespoon lemon juice
  • 1 cup flour
  • 1/2 cup white sugar
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup (1/2 stick) butter, softened

Preheat oven to 375 degrees F. Cook brown sugar and cornstarch in water until thickened, about 5 minutes. Add berries and lemon juice; spoon mix into a buttered 2-quart dish and set aside. Sift flour, white sugar, baking powder, and salt together; blend in milk and butter. Spoon over the berry mixture and bake for about 45 minutes.

This is an easy recipe to put together, and it tastes GREAT. I had a dinner party, so I doubled the recipe. I also used frozen mixed berries instead of all blueberries. All in all I give it five hats and will definitely use this recipe for years to come. – Reviewed by Gabriella Benedict
