German Pancake

Preparation Time: 35 minutes

Start to Finish Time: 45 minutes

Yield: 4 to 6 servings

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup milk
  • 4 tablespoons (1/2 stick) unsalted butter
  • Garnish: confectioners’ sugar, maple syrup, or apple butter

Preheat oven to 450º. In a medium bowl, sift together flour and salt. In a separate bowl, whisk eggs and milk in a bowl until just combined. Add wet ingredients to dry ingredients, then stir until just blended.

In a heavy 12-inch skillet, melt butter until hot and frothy. Pour batter into skillet and transfer quickly to oven. Bake 20 to 25 minutes, until golden brown and puffed. Do not open oven during baking. Serve immediately, topped with confectioners’ sugar, maple syrup, or apple butter.
