Roasted Chicken with Blueberry Glaze

- 1 pint (2 cups) blueberries
- 1 cup red wine
- 1 cup maple syrup
- ½ cup Dijon mustard
- 4 chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon parsley
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Preheat oven to 400 degrees.
Bring first 4 ingredients to a boil in a medium saucepan. Reduce heat and simmer for up to 1-1/2 hours.
Rinse chicken breasts and pat dry.
Combine seasonings and sprinkle on chicken. Roast at 400 degrees for 30 minutes.
Remove chicken from oven and smother with blueberry glaze. Return to oven for 10 minutes or until heated through.
