Blackberry Cobbler
Fruit Recipes
- Beat together until well mixed:
- 1/4 cup butter, softened
- 1/2 cup sugar
- Sift together:
- 1 cup flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- Stir into shortening and sugar with 1/2 cup milk. Beat until smooth. Pour into a greased 8x8-inch pan or dish.
- Spoon 1 to 1-1/2 cups blackberries over the batter. Sprinkle 1/4 to 1/2 cup sugar over the fruit.
- Pour 1 cup fruit juice (or water, if there is no juice) over the sugar.
Bake in a 375 degrees F oven until golden brown, 35 to 45 minutes. Serve warm with ice cream.

This recipe reminded me of my Gramma's! I would definitely make this again! I altered something, however. I added 1 cup of self rising flour and didn't add the salt and baking powder. It didn't make a bit of difference in the taste. The recipe did not specify the type of fruit juice, so I added water. Great recipe! – Anonymous Review
