How to Skin a Tomato
When all you want is the meat

There's more than one way to skin a tomato...
The quickest and easiest way we know of, this method works best for gazpacho, soups, and sauces. Recipes included below.
Cut tomatoes in half (length or width); then place a box grater over a bowl and rub cut side gently. The blades of most box graters won't cut through the skin.
Or...bring a large pot of water to a boil. Prepare a large bowl of ice water. Score the smooth bottom of each tomato with an X. Place tomatoes in hot water 30 to 40 seconds. Remove with a slotted spoon to the ice bath and chill 2 minutes. Strain from the water and peel.

Thank you ... I use the boiling water method, but didn't know about the scoring an X. That will make my weekend tomato session(s) quite a bit easier I bet! Thank you again.

Being from the state that has the best TOMATOES, when they have to be pealed, I do cut an X in the bottom of the tomato. After placing them in hot water for a couple of minutes drop them in ice water an see how easy it is to skin them.
