There are many fine Cheddars being made in New England, but Grafton is special for its balance of buttery, tangy, and earthy-mushroom notes.

In a state that takes pride in its cheese-making tradition, the rich, sharp cheddars handcrafted in the beautifully restored village of Grafton are a perennial favorite. They’re made from the milk of Vermont Jersey cows and aged for up to six years (the oldest is the splendid Stone House Cheddar, an indispensable luxury at only $25 a pound). Visitors can sample all of the cheeses at the factory store, which also sells an excellent selection of locally made products. Items can be shipped home or ordered online.

The holidays are a busy time at the Grafton Village Cheese factory, producing some of Vermont’s best prize-winning cheddars. Visitors are welcome to learn how 6,000 to 10,000 gallons of buttery milk from Jersey cows are processed daily, from cutting the curd to waxing the wheels and blocks of cheese. Different colors connote age and flavor, and visitors are welcome to sample.

Since the 1890s, the cheesemakers of Grafton, sponsored by the Windham Foundation (a nonprofit dedicated to promoting rural Vermont living), have been crafting gorgeous, creamy, nutty-tasting cheddars. Sample them at their bucolic in-town location or in Brattleboro.
