Banana Crumb Muffins

Yield: 10 muffins
Ingredients:
For the muffins1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup sugar
1 egg, lightly beaten
1/3 cup melted butter
For the topping:
1/3 cup packed brown sugar
1/8 cup all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
Instructions:
Preheat oven to 375 degrees (190 degrees C). Lightly grease 10 muffin cups, or line pan with muffin papers.In a large bowl, mix together flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
In a small bowl, mix together brown sugar, flour and cinnamon. Cut in butter until mixture resembles cornmeal. Sprinkle topping over muffins.
Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Made Banana Cumb Muffins on 6/21/03 and my husband & I loved them. I was getting tired of apple muffins & almond poppy seed muffins. I went into the web searching for new recipes and found your web-site. Can’t wait to try the other new ones I printed off your web-site.
Made this recipe & loved it. I added about 3/4 nuts to batter.
It was a nice change from our old banana quick bread recipe. I added some chopped walnuts for some crunch.
