1/2 cup almond flour (grind raw nuts in food processor - can use any nuts of choice)
1/4 cup butter, melted
1/4 tsp salt
3 cups sharp cheddar cheese, shredded
1/2 cup sifted coconut flour
Blend together almond flour, eggs, butter, salt and cheese. Add coconut flour and knead the dough with your hands for 2-3 min. Form dough into 1 inch balls and place on ungreased cookie sheet. Flatten to a diameter of about 2 - 2 1/2 inches. bake at 400 for 15 min, makes 16 crackers. taste best straight out of the oven and slightly crisp. Leftovers can be reheated at 400 for ~4 min.
