Cheese Spinach Pie

Yield: Serves 4.

It sounds terrible; it tastes great When you announce what it is, better make up your own description.

Ingredients:

  • 1 pound fresh spinach, cooked and chopped
  • 1 cup cottage cheese
  • 2 eggs, beaten
  • 1 teaspoon caraway seed
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon nutmeg

Instructions:

Mix all the ingredients together. Put in a small shallow casserole or 8-inch pie pan and sprinkle with Topping (see below).

Topping

Ingredients:

  • 1 slice bread, crumbled
  • 2 tablespoons butter or margarine
  • 2 tablespoons grated Parmesan cheese
  • 2 teaspoons chopped parsley
  • 1/8 teaspoon paprika

Instructions:

Toss the crumbs in butter or margarine until golden. Add the cheese, parsley and paprika. Spread over the spinach mixture. Bake in a 350 degrees F oven for 20 minutes.
