Yield: 4 servings
Ingredients:
1 pound shrimp1 cup cabbage, shredded
1/2 pound mushrooms, sliced
7-ounce package pea pods
1 green pepper
4 scallions
1-2 cloves garlic, minced
1 cup chicken broth
2 tablespoons soy sauce
1/2 cup slivered almonds
1 tablespoon cornstarch
1/2 cup water
1 cup boiled rice
2 tablespoons oil
Instructions:
Heat oil. Add shrimp and fry for 1 minute. Add shredded cabbage, mushrooms, pea pods, green pepper scallions and garlic, one at a time. Stirfry for 1/2 minute, after each addition. Add chicken broth and simmer at low heat for 4 minutes, until pea pods are tender. Add soy sauce and almonds. Lastly add 1/2 cup water mixed with cornstarch to thicken.This recipe was submitted by one of our readers and has not been tested by our food editors.
