Yield: Serves 6

Ingredients:

  • 6 small summer squash
  • 1 cup sour cream
  • curry powder
  • ginger
  • salt and pepper
  • 2 tablespoons grated Parmesan cheese

Instructions:

Cut the squash in two, lengthwise. Spread each piece with seasoned sour cream and bake, covered, in a pan containing a little water in a 375 degree F oven for 20-30 minutes, or until done.
