This lemon in the recipe makes the chicken plump and juicy. The chicken is great on a salad. My kids go crazy for this with a honey mustard dipping sauce or dressing.
2 boneless chicken breasts
1 cup milk
1/3 cup lemon juice
1-1/2 cups seasoned bread crumbs
1/2 cup grated Parmesan cheese
1 stick butter
Combine milk, egg, and lemon juice. Cut chicken into strips. Combine bread crumbs and grated cheese on separate dish. Melt butter in frying pan.
Dip chicken in egg mixture then coat with bread crumbs, put in frying pan. Cook both sides until golden brown. Take chicken out, sprinkle with grated cheese. Enjoy!
