Lobster Salad

Yield: Makes 4 to 6 servings.

Ingredients:

  • 1 cup wild rice
  • 4 cups water
  • 8 ounces cooked fresh lobster meat
  • 2 cooked portobello mushrooms, sliced
  • 1/2 Vidalia onion, chopped
  • 1 tomato, chopped
  • 1 red bell pepper, chopped
  • vinaigrette of your choice

Instructions:

Bring the rice and water to a boil, then simmer for 30 to 45 minutes. Cool, then add other ingredients and toss with the vinaigrette. Chill for about an hour.
