No Bake Chocolate Coconut Cookie Recipe

Yield: Makes 24 cookies.
This Is a NO-BAKE chocolate coconut cookie recipe that is rich in flavor. I remember it from childhood. It's SOOO... easy to make.Ingredients:
1-1/2 cups quick-cooking oats1/2 cup flaked coconut
1/4 cup chopped walnuts (optional)
3/4 cup granulated sugar
1/4 cup salted butter
1/4 cup milk
3 tablespoons unsweetened cocoa powder
Flaked coconut for rolling (optional)
Instructions:
Step 1: In medium bowl, combine oats, coconut (and walnuts); set aside.Step 2: In small bowl, add 1/2 cup of flaked coconut; set aside.
Step 3: Combine sugar, butter, milk, and cocoa in 2-quart saucepan.
Step 4: Cook over medium heat, stirring occasionally, until mixture comes to a full boil.
Step 5: Boil 1 minute. Remove from heat. Stir in oats mixture.
Step 6: Let mixture cool 2-3 minutes.
Step 7: While batter is still warm, slightly wet hands and make into tablespoon size balls, then roll in coconut and place on wax paper.
Step 8: Cool completely. Store leftovers in sealed bag in refrigerator.
They're even better the second day ... if they last that long!
