Portuguese Kale Soup

Yield: Makes 4 servings.

Ingredients:

  • 1/4 pound Italian sausage
  • 1 tablespoon olive oil
  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 6 boiling potatoes, peeled and chopped
  • 7 cups chicken stock
  • 1 large bunch kale, stemmed and chopped
  • salt and pepper

Instructions:

Brown the sausage, drain, and slice. Heat olive oil in a stockpot, and saute the onions and garlic. Add potatoes and stock. Bring to a boil, and simmer for about 30 minutes until potatoes are done. Puree half the soup for thickening, then pour back into the pot. Add sausage, kale, and seasonings; then simmer for another 10 minutes.

    This is a Portuguese soup….Italian sausage & olive oil? Use linguica or chourico(Portuguese sausage). Most Portuguese people will use red kidney beans and some red table wine.
