Yield: Serves 6
Ingredients:
2 cups hot mashed potatoes3 tablespoons cream
2 tablespoons butter
dash of nutmeg
whites of 3 eggs (reserve 1 tablespoonful)
salt and pepper, parsley, and paprika
Instructions:
Add the cream, butter, and seasonings to the hot potatoes, beat until very light, then beat the egg whites to a stiff froth and fold them in. Pile lightly in an ovenproof dish, and brush with some reserved egg white. Brown in the oven 12-15 minutes at 375 degrees F. Sprinkle with minced parsley and a dash of paprika.Browse Similar Recipes
