Rich and Spicy Beef Stew

This unusual rich and spicy slow cooker beef stew recipe earned an Honorable Mention in the 2012 Old Farmer's Almanac Coffee Recipe Contest.

Rich and Spicy Beef Stew

Ingredients:

  • 1 cup strong brewed coffee, cooled
  • 1-1/2 pounds beef tips
  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 1/2 cup peeled and chopped carrots
  • 3 large potatoes, peeled and chopped
  • 2 cups salsa
  • 2 tablespoons garlic salt
  • 1 tablespoon black pepper, or to taste
  • 1/2 cup green peas

Instructions:

Place all of the ingredients, except the peas, into a slow cooker and stir. Cook on low for 6 to 8 hours. About 15 minutes before serving, add the peas.
