Ingredients:

  • 2 cups salmon
  • 1 cup chopped cucumber, drained
  • 1 teaspoon chopped parsley
  • 1 teaspoon onion, minced
  • 1/2 cup celery, sliced
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup sour cream
  • 1 teaspoon capers (optional)

Instructions:

Flake the salmon. Add the cucumber, parsley, onion, celery, salt and pepper and mix well. Blend in the sour cream. Place on a bed of lettuce leaves and garnish with capers.
