Shrimp (Scallop) Fettuccini

Yield: 4 to 6 servings
This recipe was given to my father-in-law by a physical trainer as part of his diet to help lose weight & get fit. When I made it we liked the lightness of the meal but it was also filling. So now I try to make this dish at least once a week or so. I hope you share this & everyone enjoys it as much as we do.Ingredients:
2 tablespoon olive oil3 to 4 cloves garlic, finely chopped
1 medium green pepper, julienned
1 medium yellow pepper, julienned
1 medium orange pepper, julienned
2 medium red peppers, julienned
2 to 3 cups dry white wine, enough to cover peppers
1 tablespoon cilantro, or to taste
1 tablespoon basil, or to taste
1 to 2 pounds shrimp
1 to 2 pounds scallops (optional)

Instructions:
Put olive oil in a heavy pan and heat, then add chopped garlic. Cook until just browning (do not burn). Add the sweet pepper strips & cook for approximatly 3 to 4 minutes, then add basil and cilantro. Mix well then add white wine to cover peppers. Cook for approximately 1 minute. Add scallops (optional). Cook for approximately 2 minutes then add shrimp. Cook until shrimp and scallops are done. Cook fettuccini according to package directions, then drain. Add fettuccini to shrimp & scallop mixture. Let mixture stand for approximately 5 minutes, then serve.This recipe was submitted by one of our readers and has not been tested by our food editors.
