Strawberry Marmalade

Yield: Makes 2 to 3 cups.

Ingredients:

  • 2 pints fresh strawberries, hulled and sliced
  • sugar, to taste (about 1 or 2 tablespoons)
  • 1/2 cup orange marmalade
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons balsamic vinegar

Instructions:

Mix berries and sugar and let stand. Mix marmalade, lemon juice, and vinegar. Stir this in with berries, then chill. (Serve with pancakes, in crepes, or on vanilla ice cream.)
