The Forest’s Lemon Tea Bread

Yield: Makes 1 loaf.

Golden brown and nicely shaped, this tasty bread is ideal not only for teatime but also for breakfast or brunch. -- The Forest--A Country Inn, Intervale, New Hampshire

Ingredients:

  • 1-1/4 cups sugar, divided
  • 1/2 cup shortening
  • 1/2 cup milk
  • 2 eggs
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • grated rind and juice of 1 medium-size lemon

Instructions:

In a large bowl, cream together 1 cup of the sugar and the shortening. Beat in the milk and eggs. Stir in the flour, baking powder, salt, and lemon rind.


Pour into a greased 8-1/2x4-1/2-inch loaf pan. Bake in a preheated 350 degree oven for 30 to 40 minutes. Mix the remaining 1/4 cup sugar with the lemon juice and spoon over the bread while it is still warm.
