- 1 zucchini, grated
- 1 yellow squash, grated
- 1 cup cheddar cheese, grated
- 16 corn tortillas
- dab of olive oil
In a bowl, toss the grated zucchini, yellow squash, and cheese. Heat
griddle on medium heat and add a little olive oil. Put down as many
tortillas as the griddle will handle, after tey have warmed for about two
minutes, put a little cheese/veggie mixture on each tortilla. Let them
cook for another minute or two and then smash them together to make
a sandwich. Let the vegedillas cool before cutting them in fourths.
Serve with lots of salsa.
